Instructions:

  1. In a pan, heat 1 tablespoon of butter and add cumin seeds. Once the seeds start spluttering, add chopped onions and green chillies. Saute until the onions turn golden brown.

  2. Add ginger-garlic paste and saute for another minute. Then, add chopped tomatoes and cook until they turn soft and mushy.

  3. Add grated cauliflower and boiled green peas to the pan. Mix well and cook for 5-7 minutes.

  4. Add mashed potatoes to the pan and mix well. Then, add turmeric powder, red chilli powder, pav bhaji masala, and salt. Mix well and cook for 5-7 minutes.

  5. Using a potato masher, mash the vegetables in the pan until they become a smooth and creamy consistency.

  6. Add 1 tablespoon of butter and mix well. Cook for another 2-3 minutes.

  7. In a separate pan, heat the remaining butter and toast the pav buns on both sides until they turn golden brown.

  8. Garnish the Pav Bhaji with fresh coriander leaves and serve hot with toasted pav buns.
