Rajasthani Dal Baati Churm


Rajasthan is known for its vibrant culture and rich heritage, and its cuisine is no exception. One of the most famous dishes from this state is the Rajasthani Dal Baati Churma. It is a wholesome meal consisting of three components - dal (lentil soup), baati (baked wheat balls), and churma (sweet crumbled wheat). Ingredients:

For Dal:
  • 1 cup toor dal (split pigeon peas)
  • 1/2 cup chana dal (split Bengal gram)
  • 1/2 cup moong dal (split yellow lentil)
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 tablespoon ginger-garlic paste
  • 2 green chillies, slit
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • 1/4 teaspoon asafoetida
  • 2 tablespoons ghee
  • Salt to taste
For Baati:
  • 2 cups wheat flour
  • 1/2 cup ghee
  • Salt to taste
  • Water as required
For Churma:
  • 2 cups wheat flour
  • 1 cup ghee
  • 1 cup jaggery (unrefined cane sugar)
  • 1/2 teaspoon cardamom powder
Instructions:
  1. To make the dal, wash and soak all three lentils in water for at least 2 hours. Drain the water and pressure cook the lentils with 4 cups of water, salt, turmeric powder, and red chilli powder for 5-6 whistles.

  2. Once the pressure is released, open the lid and whisk the dal well. Heat ghee in a pan and add cumin seeds, asafoetida, and green chillies. Once the cumin seeds splutter, add onions and sauté until they turn translucent. Add ginger-garlic paste and tomatoes and cook until the tomatoes turn mushy.

  3. Add coriander powder and cook for a minute. Pour the cooked dal into the pan and bring it to a boil. Let it simmer for 10-15 minutes until the dal thickens. Adjust the consistency by adding water if required.

  4. To make the baati, combine wheat flour, ghee, and salt in a bowl. Gradually add water and knead the dough until it is smooth and soft. Divide the dough into equal parts and shape them into balls. Preheat the oven to 350°F (180°C) and bake the basis for 20-25 minutes until they turn golden brown.

  5. Remove the basis from the oven and dip them in melted ghee for a minute. Keep them aside.

  6. To make the churma, roast the wheat flour in a pan on low heat until it turns golden brown. Add ghee and mix well. Once the mixture cools down, add jaggery and cardamom powder and mix well. Crumble the mixture with your hands to get the desired consistency.

  7. To serve, arrange the baatis and churma on a plate and pour the hot dal over them. Top it up with a dollop of ghee and serve hot.
