Ingredients:

  • 1 cup Urad dal (black lentils)
  • 2 cups Yogurt (curd)
  • 2 Green chillies (finely chopped)

  • 1 teaspoon Red chilli powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Chaat masala
  • 1/2 teaspoon Black salt
  • 2 tablespoons Coriander leaves (finely chopped)
  • 1/2 cup Tamarind chutney
  • 1/2 cup Mint chutney
  • Sev for garnish
  • Oil for frying

Instructions:

  1. Soak the lentils: Wash and soak the urad dal in water for at least 4 hours or overnight. Drain the water and grind the lentils in a mixer or blender until you get a smooth batter. Add water as needed to get a thick yet pourable consistency.

  2. Add a flavour: Add the finely chopped green chillies, grated ginger, and salt to the batter. Mix well and set it aside.

  3. Fry the bhallas: Heat oil in a deep frying pan. Take a spoonful of batter and drop it gently into the hot oil. Fry the balls until they are golden brown and crispy. Repeat the process with the remaining batter.

  4. Soak the bhallas: Soak the fried balls in warm water for 10-15 minutes until they become soft and spongy.

  5. Prepare the yoghurt mixture: Whisk the yoghurt until it is smooth and creamy. Add the red chilli powder, cumin powder, chaat masala, black salt, and chopped coriander leaves. Mix well.

  6. Assemble the chaat: Squeeze the water out of the soaked balls and arrange them on a serving plate. Pour the prepared yoghurt mixture over the bhallas. Drizzle the tamarind chutney and mint chutney over the yoghurt. Sprinkle some sev on top.

  7. Serve and enjoy: Serve the Dahi Bhalla Chaat immediately and enjoy the delicious flavours and textures.
